These lemon sugar cookies are great for when you want to put a zesty little twist on a classic sugar cookie!

I love cookies. I REALLY love sugar cookies. However, my husband is not a fan, so I wanted to come up with a cookie recipe that kind of meets in the middle with both of our tastes. I bring to you, lemon sugar cookies.
These cookies are super simple to make and the only thing that you need to add is really just lemon!

There are a lot of lemon cookie recipes using pre-made cake mix. I am not a fan of the poo poo ingredients and prefer to just simply add some fresh lemon.
For a uniform and consistent cookie shape and size, I use my handy dandy cookie scooper in this size. That way the cookies are smaller than usual and great for grabbing quick for a little snack!
Pro tip: after mixing your cookie dough, chill it in the fridge for about ten minutes. This will make them hold their shape better!
What you need to make Lemon Sugar Cookies
- 3 cups flour
- 1 teaspoon baking soda
- 1 tsp teaspoon baking powder
- 1 tsp salt
- 1 cup butter, softened
- 1 ½ cups white sugar
- 1 egg
- 1 teaspoon vanilla extract
- Juice from 2 medium lemons
- Lemon zest

How to Make Lemon Sugar Cookies
Cream together butter and sugar. Add egg, vanilla, lomon zest, and lemon juice.
Mix dry ingredients in a bowl and slowly add to wet ingredients.
Bake on cookie sheets lined with parchment paper.
Bake 375 for 9-11 minutes
